Chicken Skewers on a Bed of Spring Panzanella

1 cup plain Greek yogurt
4 large cloves garlic
Juice of 1 lemon
2 chicken breasts
2 tomatoes
½ cucumber
½ onion
1 Tbsp olive oil

For the Chicken: In bowl, mix yogurt, garlic, and lemon (reserve 2 oz in separate bowl.) Cut up chicken breasts into one inch chunks and then toss them in yogurt mixture. Cover and marinate at least 2 hours. Skewer and grill 2.5 minutes on each side.

For Panzanella: Chop up tomatoes, half a cucumber, and half an onion into one inch pieces. Cover in 2 oz lemon and olive oil. Serve chicken over Panzanella.
