Cauliflower and Green Onion Mash

3 lbs cauliflower (cut into small florets)
1 cup green onions chopped
1 tsp olive oil
3 garlic cloves
1 cup almond or rice milk
½ tsp black pepper
½ tsp sea salt

Toss cauliflower, olive oil and garlic in a pan. Bake the cauliflower for 20 minutes on 200 degrees. Heat milk in a pan. Let it boil for 5 minutes and add cauliflower. Heat until cauliflower absorbs the liquid. Take it out in a bowl and mash it. Add sea salt and pepper. Sprinkle olive oil and green onions as garnish. Serve chilled.
