Broccoli & Cauliflower Medallions

(Substitute “potato” slices)


  • 1 stalk each Broccoli & Cauliflower


  • None


  • Trim discolored/dried out base so only good, moist stalk remains.
  • Using mandolin, slice each stalk on thin setting to make medallions.


  • Boil or steam till tender.

  • Serving size is 1 cup.
  • Freeze until ready to use.
